52 Weeks of Thankfulness – Week 14

In recent weeks, I have been returning home from my walks with purple stained fingers from eating blackberries.  Did you know they that these free blessings are an abundant source of fibre, Vitamin C, Vitamin K, phytochemicals…?

img_5621Sometimes, I gather a small bucket of these deep purple treasures, inspired to cook.  I have made blackberry muffins and several batches of blackberry and apple crumbles, making good use of this years fantastic apple harvest.

img_5618I had an impulse to make apple chutney this week, so I adapted a BBC recipe adding extra mustard seeds, cinnamon, ginger and star anise – one of my favourite spices.

The chutney is now stored away for homemade winter indulgences. I am saving a number of jars to include in Christmas food hampers for my loved ones.  I made sure to mix a little LOVE into every jar!

  1. I love blackberries in smoothies. They aren’t too sweet, and the “healthy” part is right up my alley. I especially love apples, and your image of the apple tree helped me to imagine what apple trees smell like. I may have to visit a local orchard to get a real whiff. I suspect your house smells wonderful when you fire up your recipes. By the way…how much for a basket of your goodies???

  2. I love walking out in search of blackberries with my granddaughters – they love the idea of picking something and eating it there and then! Blackberry and apple crumble… oh I miss that on my ‘healthy eating’ low carb diet it’s one of my favourites! Your apples look delicious x
