The Happy Camper
I stopped off at a very special spot in Glenveagh National Park a few weeks ago. “The Happy Camper” is a real gem of a cafe – surrounded by stunning views of ancient peat bogs with Muckish Mountain standing proudly in the background.

Maria McCormack serves her customers freshly cooked, scrumptious pancakes with a variety of toppings seen in the menu in the photograph below:

She is a most genial host and will serve you pancakes accompanied with some mightyย craic, lots of smiles and even a song or two!
My pancakes filled with bacon, topped off with maple syrup, tasted Heavenly:
A small table and two chairs help to keep environmental impact to a minimum. Food containers and cutlery are all compostable.
Seated at this tiny blue table, I pondered on times long past, when I climbed HUGE mountains like Muckish. Indeed, I scaled around 25 Scottish mountains over 3000ft, called Munros.
Today, I am content to simply gaze upon these mighty peaks, enjoying the magnificent view.

Oh how I love this! From the smiles and songs to the compostable utensils to the delectable pancakes and that view …. heaven indeed! I can’t look at the peat bogs though without reliving your horror of the fires told so vividly I could smell the smoke and feel the flames in your book. Which, if anyone is interested in my opinion really is a must-read on so many levels ๐

Thank you Osyth. I started cooking my version of pancakes and maple syrup at home. Good but not as magical as the real thing๐ I would value a review on Amazon if you feel able. They really help such a lot. I had never written a book review till I published my own. I have written 39 this year alone!

Hey Brigid – thanks for entering the competition! I’ve extended the deadline into mid-Oct but will let you know then.
I’m a fan of food trucks (or in this case a food camper van) – it’s a great way to prep and sell food while maintaining a small footprint (literally!). No need for heating, lighting, and furnishing a large room and it has no choice but to be efficient because of the size restrictions.

Spooky..l have those exact table and chairs but as miniatures on my window sill!! ๐๐ I’m reading this whilst eating breakfast and so wish I could have a bite of your pancakes, they look delicious and I love Maria’s camper cafe! The most stunning setting ever…sitting and observing the landscape sounds perfect…Wow! Well done for tackling so many of the Munros!! Very impressive indeed.๐๐บ

Thank you Annika. I have the same blue table in my garden. Unfortunately the matching chairs git rather rusty with the sea air. I have been making bacon pancakes with maple syrup rather a lot lately but they they don’t match up to Maria’s ๐ผ

I am a big fan of food trucks and this one is adorable as is the pancake maker. I have not thought of putting bacon in my pancakes and I must try it! What a lovely place for a low impact eatery, Brigid. I’m impressed with your past mountain climbing expeditions. I’ve always been more of a mountain viewer but can appreciate the efforts of the climbers!

What a truly fabulous post. I enjoyed the writing, the photos and … I could even taste those pancakes!
Muckish Mountain … I’ve not ‘met’ this mountain before so it was a delightful surprise. It looks just like a boiled egg which has had it’s top chopped off! Someone stole the top. LOL. For that beautiful little thing, I fell in love with it. It was quirky. Different. Beautiful.
I ADORED the Happy Camper. I sat gazing at the camper van with Maria smiling out of the window, and admiring how she’d done it up. Then I spied with my little eye those tiny pink camper vans in the opened window. Oh, falling in love all over again. It’s the tiny details which draw me in, and that Camper van had so many tiny details. How could one not fall in love with it?!
What a wonderful trip. I should imagine that the air there is so clean and clear. So much more easy to breathe and take in huge gulps of air and fill your lungs.
A truly beautiful write up of a wonderful time. Loved it Daisies.

Lol, that often happens when you eat something out and it’s so yummy and then you make it at home and something’s missing…I think the atmosphere might have something to do with it…nothing like eating outdoors with that mountain in the background. ๐ xo

LOL – if it ever happened that I were up and moving early enough to be served breakfast *anywhere* this adorable food truck with its darling proprietress would be where I’d want to be beamed – gazing at the scenery and drinking my coffee. (She does have coffee, right? Or must I bring my own?)

I am just back from a holiday with my son Ultan and wondering will I be able to keep the spirit of the happy camper alive during the winter and I remember that Brigid said she would be writing about me. You might need to put your walking boots back on to hike off all the pancakes ๐ Maria looks lovely, and fun, I always think food vendors are very brave doing that all on their own in unknown places. I donโt know how I missed this post, maybe I was on one my breaks.
