
Seafood chowder is a comforting dish, especially good on cold winter nights. It is also easy and quick to prepare. Perfect for the holiday season.
Ingredients
500g fresh white fish – I used haddock
500g fresh salmon fillets
200g cooked jumbo prawns – I used frozen
1 litre milk or unsweetened soya or almond milk
3 large potatoes, peeled and cut into small cubes
4 chopped spring onions
A large bunch of chopped Dill
2 heaped tablespoons cornflour
Salt and freshly ground black pepper
Method
- Add milk to pan and add chopped spring onions and potato cubes
- Simmer gently until potato is just soft
- Mix cornflour with a little water until smooth
- Add cornflour mix to milk, and stir until it starts to thicken
- Add white fish, salmon and prawns
- When fish becomes opaque add Dill
- Serve and eat immediately.
Fish Pie
The ingredients can also be adapted and made into fish pie:
- Simply boil the potatoes separately ( You will probably need around 6 large potatoes)
- Mash with butter, warm milk and salt and pepper to season
- Place cooked fish mix in a warm heat proof dish
- Top with mashed potato
- Brown under a hot grill
- Serve with peas, salad…

Hi Brigid, love the recipes. We often do a clam chowder (with tin clams added at the last minute and the liquor used in the broth)… very similar to yours except we put carrots in and no dill (although I will try that in future) and sweated onions instead of spring. Definitely going to try your version. In our fish pie sometimes put halved boiled eggs under the mash. Recently tried a sweet potato and normal potato mash (50:50) which worked really well and a celeriac and potato mash (about 1/4 celeriac 3/4 potato mix or it can become quite sloppy). Just minor variations, as I think probably everyone has their own twists on these classics. To be honest you hit the nail on the head sating there is nothing like these comfort foods on a cold dark winter’s night. Great recipes and good for soul and stomach!

I have not tried clam chowder Paul. I have tried a good few variations on fish pie – with smoked fish, mussels… Also sliced potatoes, tomatoey sauces… Being a Piscean I am a great lover of seafood. 😊

I’ll be trying out this recipe using lactose-free milk as I adapt to a diet that is friendlier to my gut. I do love chowder and this one combines some of my favorite ingredients! So, you write, you garden, you cook…You go girl!

I’m in Kincardine, but not fish Markets in the village. Last summer we went to Crieff for lobsters. I think I’m spoiled with from the Caribbean where there was a larger variety of seafood readily available.
I also miss going fishing.
